Das Zuckerrohr wird direkt in der Karibik geerntet, fermentiert und destilliert. Ein brauner Rum erhält einen großen Anteil seiner Aromen und die dunkle Färbung unter anderem durch die Lagerung und Reifung in Eichenholzfässern, die häufig zuvor für Whiskeys oder Cognacs Reifung eingesetzt wurden. Steinhäger may only be distilled and produced in Steinhagen according to EU law. For Original Schlichte with 38% vol., only selected juniper berries are fermented and distilled. In a separate distillation process, fine grain distillate is created. Juniper extract and fine grain distillate are then carefully distilled again in large stills. This Steinhäger distillate is reduced to drinking strength with water from its own well, filtered, and stored until bottling.
