The Production: Brandy is named after both its raw
material and its production process. It is made from spirits, specifically wine
distillate, which is distilled to less than 86% ABV. Distillation occurs in two
steps. The first distillation produces the "rough brandy," and the
second distillation yields the "fine brandy," the actual
"heart" of the wine distillate. After distillation, the spirits are
aged and matured in oak barrels. The distillates "breathe" within
these barrels. Oxygen enters through the pores of the wood, creating bouquet
and flavor compounds that, combined with the color and flavor components
leached from the wood, give the wine distillate its characteristic flavor and
color.
For an entire generation in
Germany during the 1960s, whisky was synonymous with Racke Rauchzart, the
pioneer of the German whisky market. The harmonious combination of delicate
grains and smoky malts from Scotland, along with careful aging in small wooden
casks, continues to give it its mild – indeed “rauchzart” (smoky-tender) –
character. The “German” whisky – bottled in Scotland – that has been known and
loved for years impresses with its taste and outstanding quality.
