Steinhäger darf nach EU-Recht nur in Steinhagen gebrannt und Hergestellt werden. Für Original Schlichte mit 38 % vol werden dabei nur ausgesuchte Wacholderbeeren vergoren und destilliert. In einem separaten Brennvorgang wird Kornfeindestillat erzeugt. Wacholderlutter und Kornfeindestillat werden in großen Brennblasen nochmals sorgfältig gebrannt. Dieses Steinhäger-Destillat wird mit Wasser aus dem eigenen Brunnen auf Trinkstärke herabgesetzt, filtriert und bis zur Abfüllung gelagert.

Steinhäger may only be distilled and produced in Steinhagen according to EU law. For Original Schlichte with 38% vol., only selected juniper berries are fermented and distilled. In a separate distillation process, fine grain distillate is created. Juniper extract and fine grain distillate are then carefully distilled again in large stills. This Steinhäger distillate is reduced to drinking strength with water from its own well, filtered, and stored until bottling.
