In 2004, the brand's image was completely revamped. With this relaunch, Dujardin Imperial firmly established itself as a premium brand. The Production: Brandy is named after both its raw material and its production process. It is made from spirits, specifically wine distillate, which is distilled to less than 86% ABV. Distillation occurs in two steps. The first distillation produces the "rough brandy," and the second distillation yields the "fine brandy," the actual "heart" of the wine distillate. After distillation, the spirits are aged and matured in oak barrels. The distillates "breathe" within these barrels. Oxygen enters through the pores of the wood, creating bouquet and flavor compounds that, combined with the color and flavor components leached from the wood, give the wine distillate its characteristic flavor and color.
