After distillation, the spirits are aged and matured in oak barrels. The distillates "breathe" within these barrels. Oxygen enters through the pores of the wood, creating bouquet and flavor compounds that, combined with the color and flavor components leached from the wood, give the wine distillate its characteristic flavor and color.
